Most groups do "Etna cable car + Taormina" as a single day. A potentially better alternative for our food/history-prioritized group: morning at an Etna winery (tasting + light lunch) → afternoon at Silvestri Craters (free, gentle walk) on the south side → drive home. Skip the cable car altogether. This eliminates the most physically demanding part for the seniors (altitude, cold, uneven lava gravel) and replaces it with a substantive food/wine experience.

Booking lead times in June: 3–6 weeks ahead for Benanti, Planeta Sciaranuova, Cornelissen, Pietradolce. Tornatore and Cottanera are usually fine 1–2 weeks out. The cable car you can book day-of (online to skip queues).
Etna jeep tours: Go-Etna is the most consistently named operator across review platforms — Matteo and Fortunato are flagged by name in reviews. Hotel/villa pickup feasible. Booking tip: book only 24–48 hours before — Etna conditions shift (volcanic activity, weather), and locking in too early sometimes means a refund/reschedule scramble.
Bring layers for the cable car top — 10°C cooler than Taormina/Catania. Closed-toe shoes essential — volcanic gravel is unforgiving.
Skip Alcantara Gorges — pretty from the top platforms only. Lower viewpoints involve significant stairs/elevators down. For our group, Silvestri Craters is the better volcano walk.
